Ingredients:
For cupcakes:
- 1 3/4 cup all-purpose flour
- 1 tbsp. baking powder
- 1 pinch salt
- 3 egg whites
- 1 tbsp vanilla essence
- 1 cup warm milk
- 3/4 cup melted butter
For vanilla buttercream:
- 2 cup butter
- 1 tin condense milk
- 1/2 tsp. vanilla paste
Method:
Sift the flour, baking powder, sugar, and salt. Then take a separate bowl and whisk the egg whites. Add the vanilla essence, warm milk and melted butter into the bowl. Finally, pour the wet ingredients from the bowl to the sifted dry ingredients. Whisk with a hand till it forms a smooth cake batter.
Preheat the oven in 180 for 10 minutes. Use cupcake liners and put the batter with an ice cream scoop. Bake in the oven for 30 minutes. Insert a toothpick to check if the cupcakes are baked well!
While the cupcakes are baking, prepare your condensed milk buttercream. For this, you need to chill the bowl in the refrigerator. Add room temperature butter in the bowl and beat it using an electric beater till it becomes smooth and soft. Add chilled condensed milk to the butter and beat till they are nicely incorporated. Finally, add 1 tsp of vanilla paste.
Put the buttercream into a piping bag and pipe them on cooled cupcakes using a star tip nozzle. Garnish with fresh cherries from your garden and voilà you have made some moist soft vanilla cupcakes with the best buttercream you could imagine!
