Tasty @CafeOn: The perfect Eclairs recipe!

Want to make deliciously crispy and puffy eclairs that you see displayed in a bakery? We bring you a foolproof recipe for the best classic eclairs that you can try at home. Filled to the brim with fresh vanilla pastry and coated with chocolate, these eclairs taste like heaven in your mouth!

Ingredients for 12-14 Eclairs

For Choux Pastry:

  • 1 cup water
  • 1/2 cup butter
  • 1 cup flour
  • 1/2 tsp salt
  • 2 tsp granulated sugar
  • 1 tsp vanilla essence
  • 5 eggs

For Vanilla Custard cream:

  • 1 cup milk
  • 4 egg yolks
  • 1/2 cup sugar
  • 2 tsp vanilla essence
  • 4 tsp cornflour

Method

  1. At first, take a pan and boil a cup of milk. Add your vanilla essence/ paste or beans.
  2. In a bowl whisk the egg yolks, sugar, cornflour till it becomes a little light in color.
  3. Temper the egg yolks by pouring 4 to 6 spoons of hot milk.
  4. Now pour the mixture over the hot milk in the pan. Make sure to whisk it so that they do not form any lumps.
  5. Keep on whisking till the milk thickens. Then take it out of the stove, cover it up with plastic wrap and cool it inside the fridge.
  6. Take a fresh pan and add water, butter, sugar, vanilla essence till it comes to a boil.
  7. Add a cup of flour and milk it to form a soft dough.
  8. Take the mixture out of the stove and add the eggs one at a time till it forms a ribbon consistency.
  9. Now using a star tip nozzle in a piping bag, pipe the eclairs in your baking tray. Make sure to space them out.
  10. Bake at 360 degrees celsius for 45 minutes till they are golden on top.
  11. Cool them down and cut in the middle to pipe the pastry cream in between. You can also opt for filling them up inside using a cream nozzle.
  12. Finally, drizzle the eclairs with chocolate ganache and you are ready with the most decadent classic eclairs.
